[Korean Food] Kalguksu (Handmade Noodle Soup) Recipe

Kalguksu is a traditional Korean noodle soup that is made with handmade wheat noodles and a rich broth. The name "Kalguksu" literally means "knife noodles" in Korean, as the noodles are typically cut by hand into thin strips. This comforting and hearty dish is a popular comfort food in Korea, especially during the colder months.

History of Kalguksu

Kalguksu has a long history in Korean cuisine and is believed to have originated in the Goryeo Dynasty (918-1392). At that time, the noodles were made with a mixture of wheat and buckwheat flour, and were served as a special dish for royal occasions. Over time, the dish became more popular among the common people, and the recipe evolved to include various ingredients such as chicken, seafood, and vegetables.

 

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 egg
  • 1 tsp salt
  • 4 cups chicken or beef broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp vegetable oil
  • 2 cups sliced vegetables (carrots, zucchini, mushrooms, etc.)
  • 1 cup cooked chicken or beef, shredded
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • Chopped scallions and red chili flakes for garnish

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Slowly add the warm water while stirring with a wooden spoon until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover the dough and let it rest for 15 minutes.
  3. On a floured surface, roll out the dough to about 1/8-inch thickness. Cut the dough into thin strips about 1/4-inch wide.
  4. In a large pot, bring the chicken broth to a boil. Add the onion, garlic, carrot, zucchini, and chicken, and let simmer for 10-15 minutes until the chicken is cooked through.
  5. Add the soy sauce, salt, and pepper to the broth, and stir to combine.
  6. Add the noodles to the pot and let simmer for 5-7 minutes until the noodles are cooked through.
  7. Ladle the soup into bowls and garnish with scallions and sesame seeds. Serve hot.
