Ingredients:

- 2 tablespoons soy sauce

- 4 cups water or vegetable broth
- 1 block firm tofu, cut into small cubes
- Salt and pepper to taste
- Chopped scallions and sliced chili peppers for garnish
Instructions:
- Heat the vegetable oil in a large pot over medium-high heat. Add the onion and garlic, and cook until the onion is translucent and fragrant.
- Add the zucchini, potato, and mushrooms, and cook for a few minutes until the vegetables start to soften.
- Add the gochujang, soy sauce, and doenjang, and stir to combine.
- Add the water or vegetable broth, and bring to a boil. Reduce the heat to low and let simmer for 20-30 minutes until the vegetables are tender and the stew is fragrant.
- Add the tofu to the pot, and let simmer for another 5-10 minutes until the tofu is heated through.
- Season the stew with salt and pepper to taste.
- Ladle the stew into bowls and garnish with scallions and chili peppers. Serve hot.
