[Korean Food] Doenjang-jjigae (Soybean paste stew) Recipe

History

Doenjang-jjigae has been a popular dish in Korea for centuries, with records dating back to the Joseon dynasty (1392-1897). The dish is believed to have originated from the northern regions of Korea, where the harsh winters made it necessary to create hearty and nourishing stews. Today, doenjang-jjigae is enjoyed throughout Korea and is considered a classic comfort food.

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 potato, peeled and diced
  • 1/2 cup sliced mushrooms
  • 1 tablespoon gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons doenjang (fermented soybean paste)
  • 4 cups water or vegetable broth
  • 1 block firm tofu, cut into small cubes
  • Salt and pepper to taste
  • Chopped scallions and sliced chili peppers for garnish

Instructions:

  1. Heat the vegetable oil in a large pot over medium-high heat. Add the onion and garlic, and cook until the onion is translucent and fragrant.
  2. Add the zucchini, potato, and mushrooms, and cook for a few minutes until the vegetables start to soften.
  3. Add the gochujang, soy sauce, and doenjang, and stir to combine.
  4. Add the water or vegetable broth, and bring to a boil. Reduce the heat to low and let simmer for 20-30 minutes until the vegetables are tender and the stew is fragrant.
  5. Add the tofu to the pot, and let simmer for another 5-10 minutes until the tofu is heated through.
  6. Season the stew with salt and pepper to taste.
  7. Ladle the stew into bowls and garnish with scallions and chili peppers. Serve hot.
